Longjing Loose Leaf Tea Longjing or Dragon Well tea is perhaps the most well-known green tea in China; originates from Hangzhou, the capital of Zhejiang Province. Longjing in Chinese literally means 'dragon well'. It is pan-fried and has a distinctive flat appearance.
Most of the tea on the market is in fact produced in other provinces and, hence, is not authentic Longjing, despite many tea producers claims.
Longjing tea leaves are roasted early just after picking, to halt the natural oxidation process, which is used to make black and oolong teas. The is stopped by heating the leaves in pans or by steaming the leaves before they completely dry out. As with many other green teas (and white teas), Longjing tea leaves experience minimal oxidation. When steeped, the tea produces a yellow-green colour.
The tea also contains vitamin C, amino acids, and has one of the highest concentrations of catechins among teas.
